"This recipe is a great way to used canned or leftover salmon, and is easily adapted to include whatever spices you like."

Ingredients  --  Double these ingredients to make 6 patties.

·         1 (7 ounce) can salmon, drained and flaked

·         1 egg, beaten

·         1 tablespoon olive oil

·         2 green onions, finely chopped

·         1/2 cups finely crushed saltine cracker crumbs

Directions

1.     Preheat oven to 375 degrees F (190 degrees C).

2.     In a medium bowl, mix together salmon, egg, olive oil, green onions, and cracker crumbs. Form mixture into patties. Arrange in a single layer on a baking sheet.

3.     Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.
